Soup. Ah, soup is the one dish I think we universally love in the fall and winter, right? This is one of my favorite go-to&rsquo;s and am so happy to share this with you today in hopes you&rsquo;ll create this in your kitchen later for a super easy and healthy lunch or dinner for your busy week ! Hearty Black Bean and Corn Soup is a hearty combination of sweet corn, starchy black beans, fiber rich zucchini, all swimming in a tomato and vegetable stock base; topped with fresh cilantro, lime, jalapeno, and avocado and you&rsquo;ve totally got it made.<br />

A grilled cheese is my go-to comfort food. Who can resist a good cheesy melty sandwich?<br />

My favorite way to cook a grilled cheese sandwich is with some caramelized bacon and granny smith apples <a style="color: #333333; text-decoration: none;" href="http://www.hk-pub.com/forum/thread-4267046-1-1.html">Beauty Mama</a>. If you haven&rsquo;t tried this combination before you are missing out! It&rsquo;s savory, sweet, and and a little tart from the apples.<br />

INGREDIENTS<br />

2 pieces of sourdough bread<br />
3 slices of bacon<br />
3-4 slices of sharp cheddar cheese<br />
4 thin slices of granny smith apples<br />
Brown Sugar<br />
Butter<br />
Mayo<br />
PREPARATION<br />
<br />
Preheat your oven to 400 Degrees. Lay bacon out on a cookie sheet and sprinkle with brown sugar. I like to put foil underneath for easier cleanup . Cook in the oven until desired crispiness is achieved. About 10 minutes or less.<br />
<br />
Butter outsides of bread and spread on some mayo. Layer cheese, bacon and apple slices. Cook sandwich in a frying pan or grill pan over low/med heat so that the cheese can melt without burning the outsides.<br />

Cook 3-4 minutes on each side.]]>

This roasted kale and salmon detox salad is my new favorite salad. The salmon sits atop a bed of kale and cherry tomatoes, and beautiful blood oranges add a hint of sweetness. And best of all, this salad can all be cooked on one pan.<br />
<br />
I never thought I&rsquo;d be jazzed up about a salad. I mean, I like salads and all, like this parmesan crusted romaine and chicken salad, but of course I cannot have cheese on whole30 (see overview here here and here) and so when I made this, I was beyond excited that a salad I could eat was THIS amazing. This salad has it all: a little crunch, a little citrus, delicious leafy greens and perfect flavor combinations.<br />
<br />
Normally, the way I make salmon is by simply baking it, but of course I bake it with a lemon on top. By baking it with the lemon, subtle citrus notes stay with the salmon. I took that same concept of baking the salmon with this salad, but this time I placed blood orange slices on top of the salmon. It added a pleasant sweetness. And can we talk about the gorgeousness of of blood oranges? I just cant get enough! I love the deep red (blood) color and unique orangy flavor. My only wish is that I could have&nbsp; a year round supply in my house (someone needs to invent abundant citrus trees in my back yard (I live in Wisconsin so these trees would have to be ok in winter, just throwing that out there..)<br />

And let&rsquo;s not forget the amazingness that is kale! Kale is packed with tons of vitamins and nutritional value, but until recently I hadn&rsquo;t paid any attention to it. I was over at my friends house when she cooked kale (see whole30 week 3 day 16) and since then I couldn&rsquo;t/can&rsquo;t get enough.<br />
<br />
Fresh, a little crispy around the edges, sweet acidity that counteract the earthy tones of the kale, the little tomatoes burst in your mouth, everything about this salad is fantastic!]]>

My sister in-law's mother, Petra, is a native Oaxacan and makes some of the most incredible mol&eacute; I've ever had.&nbsp; Rich and velvety and layered with flavors upon flavors, it's like the culinary equivalent of gold.&nbsp; Every year she makes the trip from her home in Mexico to California to visit relatives and every year a brick of her prized mol&eacute; makes the journey with her.&nbsp; That's right, she actually carries the brick onto the plane and travels with it tucked protectively into her carry-on baggage.&nbsp; Take note my friends because THAT is true dedication to one's culinary craft!<br />

And every year Sarah and I beg and plead with my sister in-law to save just a sliver of that brick for our annual visit to California.&nbsp; On the occasion a sliver is saved, we savor it with the respect it deserves, musing at its complex notes. Then, a couple years ago, I the got the offer most chefs would kill for (and the offer I'd been not so subtly hinting at from my first bite of that mol&eacute;) ... A cooking lesson with Petra herself and the chance to learn the secrets of traditional mol&eacute; making!&nbsp; Score!<br />

Hold your excitement, dear readers because the recipe I'm about to share isn't Petra's famed mol&egrave;.&nbsp; Much to my chagrin, I've not actually made it to this cooking lesson yet.&nbsp; Shameful, I know.&nbsp; Frankly though, even if I did possess the coveted recipe, I'm not sure I could share it here.&nbsp; Chef-to-chef etiquette dictates that some secrets be left untold.<br />

What I CAN offer is my own version of Perra's mol&egrave;.&nbsp; It is a recipe cobbled together from years of sampling the real thing and guessing at its ingredients but a pretty good one all the same.&nbsp; Let me be very clear, I would never be so bold as to claim that this recipe is an authentic Oaxacan mol&eacute;.&nbsp; It's not.&nbsp; And obviously pork ribs are a fairly untraditional vehicle for mol&eacute;.&nbsp; No, traditional this isn't!&nbsp;&nbsp; Instead I will call this my ode to the 7 mol&eacute;s of Oaxaca.&nbsp; I think it most embodies the Negro and Rojo varietals but with the addition of fresh tomatilos and corn tortillas it also gives a nod to Mol&eacute; Verde and Mol&eacute; Chichilo.]]>

We are taking a little road trip to spend some time on the beach with our family in Southern California this week. I can&rsquo;t tell you how nice it is to be outside, and not instantly melt into a puddle of sweat! When I was little, we used to come here every summer and visit my grandparents, so I&rsquo;m excited to watch my boys play in the waves, look for seashells, and dig for sand crabs like I used to do. Maybe even eat a literal SANDwich or two and start a seaweed fight!<br />

Before we left, I made these Healthier Raspberry Almond Muffins, and could hardly wait to share them with you. They remind me of my Raspberry Almond Crumb Bars, which are to die for, but are lightened up just a bit in the form of a muffin with the help of coconut oil and Greek yogurt. The nice thing about this recipe is that it is super quick to whip up. You only need a couple of bowls and a wooden spoon. You don&rsquo;t even have to break out the mixer, and because these muffins are mixed by hand, the crumb is so tender!<br />

I think I already told you about my summer berry obsession, and so of course I had some raspberries that were ready to be used up in the fridge. The tart berries tucked away in the slightly sweet almond muffins are so perfect!<br />
<br />
When I don&rsquo;t top my muffins with a streusel, I like to use a course sparkling sugar. You can find it at most grocery stores in the baking aisle, or at craft store with the cake decorating supplies.<br />
<br />
You may also notice that these muffins start out baking at a high temperature, but only for a few minutes. This really helps activate the leavening agents right away so they have that perfect muffin dome we all love!]]>
